Dan Powers

Dan Powers has worked with some of the top chefs in St. Louis: Mike Johnson at Boogaloo and Roxane, Cary McDoll at Revival, and most recently with Matt Bessler at Schlafly Bottle Works. Now, Dan is bringing this wide variety of techniques and style under one roof.

Dan helped Boogaloo part owner Mike Johnson get the Creole restaurant off the ground eight years ago. Now it’s all Powers’.

He said he couldn’t ask for a better place. “It’s the kind of food I like, the neighborhood I like.”
Powers, 29, has lived in Brentwood for the past eight years.

He learned the trade through experience. He has no formal schooling in a kitchen. Powers was a sous chef and supervisor at the Schlafly Bottleworks for the past six years.

“He worked at the meat department at Whole Foods, so he has some butchering experience,” Charles O’Rear, front of house manager at the Bottleworks said.

“He’s very well-rounded in the kitchen. He has a lot of experience smoking meats, and he knows a lot about local purveyors and local products.”

Besides that, O’Rear said Powers is a “good guy, honest, straight shooter, hard-working.”
Powers said the food at Boogaloo is his favorite–creole, jerk, Caribbean, the Cuban sandwich–so don’t expect a big change in the menu. He said it’s what people come in for everyday.
